Perfect Egg Scramble


For this recipe I used kielbasa for protein but you can use whatever protein you'd like and it will still come out great.


I have made this recipe with turkey pepperoni or no meat at all.


I recently started to like eating mushrooms so I included them in this recipe, if you don't like them, just sub in another veggie like peppers or onions.


The sour cream is the most important ingredient. If you don't have sour cream, Greek yogurt would work well too. This is the secret to making the eggs super fluffy and delicious! Most people add milk but I found that sour cream or Greek yogurt works so much better!


Perfect Egg Scramble

Ingredients:

1 tablespoon butter

1 handful mushrooms, chopped

1 turkey kielbasa sausage, chopped

4 large eggs

1 heaping tablespoon sour cream

1 handful shredded cheddar cheese


Prep time: 5 minutes

Cook time: 5 minutes

Total time: 10 minutes


Instructions:

  1. Add tablespoon butter to frying pan over medium heat.

  2. Saute mushrooms and kielbasa for 5 minutes over medium heat, or until browned.

  3. While sauteing mushrooms and kielbasa, in a bowl whisk together the eggs and sour cream until sour cream blends with the eggs.

  4. Add the egg-cream mixture to the pan and cook while stirring frequently. Just before the eggs are done, stir in the cheese and continue cooking until melted and fully incorporated.

  5. Serve with fresh salsa and avocado.

  6. Enjoy immediately!

Note: This recipe does not have added salt because the meat and cheese has enough to flavor it. If you omit these ingredients, be sure to add salt to taste.
